Easy One-Bowl Brownies

Everyone loves Brownies right? I certainly do and everyone who's ever eaten these ones do! Brownies are different in Ireland, just like Cheesecake... and whilst in general I think the food available here is better and more wholesome than in the states, I really think some things are best left to Americans! In the Offaly Weekender there was a brownie recipe last week and I just wanted to scream... it doesn't have to be so complicated!!! This is such an easy recipe, you only need one bowl and a spatula! Delicious!!!

Easy One-bowl Brownies

  • 1 cup / 8 fl. oz. melted butter
  • 2 cups sugar
  • 4 eggs
  • 1 tsp vanilla
  • 1 tsp baking powder
  • 2/3 cup of cocoa powder (I use Cadbury's Dutch processed)
  • 1 cup flour
  • 1/2 tsp salt
  • Walnuts / pecans, chopped (optional)

Pre-heat oven to 190C/375F. Butter a 9x13 baking pan for thinner but good size brownies or a 9x9 dish for thicker brownies. Dust the pan with cocoa as you would flour. Melt butter in large bowl and beat in sugar (I do it by hand) until well mixed. Add vanilla then the eggs one by one until well incorporated. Add all the dry ingredients and mix until combined. If using the nuts, blend in at this point. Pour into pan and bake for about 35-40 minutes or until edges are done and middle is slightly gooey. Let stand for about 15 minutes and slice. These are delicious enough to be served as is, or top with whipped cream or ice-cream. Can't go wrong!

Variation
For a really elegant finger dessert bake the batter in a mini muffin pan (only about 15 min), then when cooled top the little muffin/brownies with vanilla whipped cream and slice a strawbery on top of each one and drizzle with chocolate. Enjoy!!!
