Wild Mushroom Tagliatelle
So as promised here is a variation on Gordon Ramsay's Wild Mushroom Tagliatelle from the Secrets cookbook, a must for any kitchen! I didn't have shallots and not enough mushrooms, so this recipe serves two. It was really easy and quite delicious. Even Ella the perpetually picky two year old loved it... ok well ate it... some of it!
Ingredients:
Saute the onion in the butter and when opaque, add the mushrooms. When cooked through, add the cream. Simmer for a few minutes and pour over the fresh pasta, which you will have cooked in salted water until al dente and drained. Garnish with parmesan shavings. (Use a potato peeler to shave your block of Parmesan)
Easy right? And yummy!!!

I got a pasta machine for Christmas and it has been amazing. It is really so easy to make once you get the hang of it. Basically use 100g of flour for every egg. An average recipe will use about 500g flour. So pile your flour on the counter, make a well in the center, crack in the eggs, add a little salt a teaspoon or so of olive oil and knead away. When it's smooth and a nice pale yellowy colour it's ready to go through the pasta machine. Follow your machines instructions. You can also use a rolling pin if you don't have a pasta machine, but the dough is very elastic, so it takes a lot of muscle! It sounds like a lot of effort, and it is at first, but once you get the hang of it, it goes very quickly and is SO worth it in terms of taste. Good luck!
